Can I use a TV rabbit-ear (with a BNC-to-SMA converter) as an antenna for my Wi-Fi router?

Precisely, RF antennas must be “tuned” to specific frequencies in order to amplify and/or receive certain transmissions. Terrestrial TV works on radically different frequencies than 802.11 wireless networking and therefore TV antennas will provide little or no increase in performance.
